I’ve been testing Gourmet Cupcake Recipes for my niece’s bridal shower and I must say I think these Deep-Chocolate Brownie Cupcakes are going to be very hard to beat.
This week has just flown by, the weather is finally starting to turn. It’s been so sunny, not as warm as I’d like it yet but hopefully soon.
My sister, Anna, and I are off to the venue today to meet with the caterer. We are choosing the menu for my niece’s bridal shower. The food is such an important part of the day and we’re hoping we choose a menu everyone will enjoy.
For all you chocolate lovers out there this Deep-Chocolate Brownie Cupcakes recipe is definitely a recipe you want to add to your collection.
The aroma of chocolate and walnuts lingered throughout the house and my son, Matt, was hovering the entire time I was baking, “Are they done yet?”,”can I eat one yet,” “please don’t add too many nuts”. I complied, not, I used the amount of nuts the recipe called for and he loved them.
If you are looking for a light, fluffy cupcake, this isn’t the one for you but it does have a deep-chocolate flavour, definitely more like a brownie, just make sure you don’t over-bake them so they remain moist inside.
This recipe is versatile, it could go from a cupcake to a brownie, to a base for an individual, layered chocolate mousse dessert.
If I end up choosing this cupcake for V’s shower I think I will make them as a mini cupcake, they are very rich, they may be a tad to heavy especially since we will be serving all kinds of goodies that day.
My sister, Connie, has already started baking cookies, time for me to start. We bake trays and trays of cookies, and it’s a tradition for each of the guests to take a plate or two home.
My cupcake search is continuing, I thought the Orange Cupcakes were taking the lead but now that I’ve tried this recipe for Deep-Chocolate Brownie Cupcakes I’m not so sure. Let me know what you think! I think making a choice is going to be harder than I anticipated.
Deep-Chocolate Brownie Cupcakes
(from Food and Drink)
- 4 ounces (120 g) unsweetened chocolate, broken up
- 2/3 cup (150 ml) unsalted butter
- 1 1/2 cups (375 ml) granulated sugar
- 4 large eggs
- 1 teaspoon (5 ml) pure vanilla extract
- 1 1/4 cups (300 ml) all-purpose flour
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (2 ml) salt
- 1 cup (250 ml) chopped-into-bits semi-sweet chocolate or chips, about 175 g (6 ounces)
- 1 cup (250 ml) broken toasted walnuts or pecans
Chocolate Ganache Icing
- 1 cup (250 ml) chopped-into-bits semi-sweet chocolate or chips, about 175 g (6 ounces)
- 1/2 cup (125 ml) whipping cream
- 1 teaspoon (5 ml) pure vanilla extract
- Preheat oven to 350° F (180° C)
- Line 18 muffin cups with papers or silicone cups. Over low heat, melt chocolate and butter together in a large saucepan, stirring until smooth. Remove from heat. Stir in sugar, then eggs, 1 at a time, and vanilla.
- Mix flour with baking powder and salt. Stir into chocolate mixture along with chocolate and nuts. Divide among cups. Bake 16 to 18 minutes or just until cupcake centre is raised and feels slightly firm when touched. Do not over-bake. Cool completely on rack.
- Meanwhile, to make icing, melt chocolate in whipping cream over very low heat in a small saucepan. When almost smooth, remove from heat and stir in vanilla. Cool to room temperature.
- Ice cupcakes. Icing sets at room temperature in about an hour. Store cupcakes at room temperature, covered, for up to 3 days, or freeze for up to a month.
Back to the kitchen for me, this will be my 1st attempt at pavlova, a little nervous, wish me luck!

WOW these look amazing!!! Brownies are one of my all-time favourites so I bet I would love these cupcakes!
Have you ever tried Ina Garten’s “Outrageous Brownies” recipe? It is the best one I have tried – they are so rich and almost fudge-like, just the way I like ‘em!

hi there,i have a slight problem with the nuts in this recipe surprisingly all my four boys and my husband have bad vibes for nuts!and i was wondering if i could replace them for chocolate chips or anything else please.it would be i life saver my kitchen turns into a battlefield if the boys or my husband sees any nuts in our desserts espcially because of their love for chocolate will never end.byeee

Alyina sounds like our house, my kids don’t favour nuts either, you can leave them out if you wish and if you wish increase the chocolate bits.

you just stoped WW3 in my kitchen again thankyou so much i made these cupcakes yesterday and the first thing i get is are there any nuts?thankfully no, again these cupcakes are a little taste of heaven thankyou sooooo much
